Seared Halibut Fillets

It’s Memorial Day weekend which means grilling burgers and hot dogs, and going to the beach. Well that’s what everyone else might be doing this weekend but that’s not the case for me… While I wish I were able to go to the beach that’s just not possible here in Colorado. So instead I am enjoying the good weather with some bike riding and cooking up some delicious halibut instead of hamburgers.

Let me say although I love a good hamburger, this halibut recipe makes up for the fact that I have no beach to go to. It’s been awhile since I have had halibut so when I saw it on sale in the store I knew I had to get it.

Shakshuka w/ Spinach & Feta

Happy Mother’s Day to all the moms out there, specifically though to my own mother! One thing I dislike most about being so far from my family is not being able to spend holidays with them as easily. So I have to send my love from afar and cook something as if my mom were here.

Shakshuka is an Israel dish made with tomatoes, peppers, and topped with poached eggs. That’s all I know about it. I would be lying if I said the only reason I decided to make this recipe is because it looked so pretty…

Carnitas (Pork) Tacos

Cinco de Mayo is just around the corner so begins my first week of festive dishes to make. Of course Cinco de Mayo is not the only time of year to make tacos and margaritas. I personally believe in a monthly celebration of tacos and margaritas so be sure to make these year round!

I have never met a taco I didn’t like but these carnitas tacos just might be the best I’ve ever made. This recipe starts with a big ole’ hunk of pork shoulder that almost looks too good to cut up (almost).

Shepherds Pie

I decided to get in touch with my Irish roots this weekend and whip up a Shepherds Pie. This was my first time making one and I got to say I don’t know why I’ve waited this long!  It’s really delicious and a great one pan meal. Of course with St. Patrick’s Day and Pi Day being this week I decided to celebrate the days with one dish!

I know Shepherds pie is usually made with all the lamb, and while I like lamb, I find the flavor can be too strong at times. So I decided to mix it with ground beef to keep some of the lamb flavor without it being overbearing. Also, I happened to have the right amounts of both ground beef and ground lamb in my freezer so that’s what I went with!

Thai Chicken Curry

Have you ever heard of the Manitou Springs incline? If you have and/or have ever done it you will understand the pain that my legs are in today. If you have not heard of it, it’s a one mile trail just outside of Colorado Springs. One mile sounds easy until you read a little bit further and see that it gains over 2,000 feet of elevation in that 1 mile. Yesterday I decided to give it a try and today muscles hurt I didn’t even know I had. I recommend doing it to give yourself a challenge but if you do, you are going to need a delicious meal to make you feel better for all the hard work you did.

Thai chicken curry is my kind of comfort meal to make me forget that standing up is a painful task.
