Rhubarb Crisp

I am in rhubarb heaven here in Colorado! Growing up I had rhubarb every summer when I would go visit family in Montana. My grandparents and aunts grew rhubarb in their backyards and I loved to go cut big pieces of stalks and watch them make it into all sorts of baked goods. It was always one of my favorite things about going out there since it wasn’t something we had in Florida.

Being my first full Spring in Colorado I wasn’t sure how much rhubarb there would be out here. I was thrilled when I walked into the store a couple of weeks ago and saw huge amounts of it waiting for me to turn it into rhubarb margaritas and whatever else I desired!

Shakshuka w/ Spinach & Feta

Happy Mother’s Day to all the moms out there, specifically though to my own mother! One thing I dislike most about being so far from my family is not being able to spend holidays with them as easily. So I have to send my love from afar and cook something as if my mom were here.

Shakshuka is an Israel dish made with tomatoes, peppers, and topped with poached eggs. That’s all I know about it. I would be lying if I said the only reason I decided to make this recipe is because it looked so pretty…

Rhubarb Margaritas

To continue my recipes for cinco de mayo I of course had to make some margaritas! I have been making margaritas since I was old enough to use the blender. My parents for some reason thought it was a good idea for a twelve-year-old to make their margaritas. I of course never drank them and it was the only drink they would have me make. Whatever their reasoning was, I became a margarita maker extraordinaire.

Back then I only made the traditional margarita. A traditional margarita is a classic for a reason and I have always been a fan of not messing too much with classics.

Carnitas (Pork) Tacos

Cinco de Mayo is just around the corner so begins my first week of festive dishes to make. Of course Cinco de Mayo is not the only time of year to make tacos and margaritas. I personally believe in a monthly celebration of tacos and margaritas so be sure to make these year round!

I have never met a taco I didn’t like but these carnitas tacos just might be the best I’ve ever made. This recipe starts with a big ole’ hunk of pork shoulder that almost looks too good to cut up (almost).

Roasted Lemon Garlic Broccoli

It has been snowing here nonstop for over 24 hours and will keep snowing for an additional 24 hours… I have to say this is Spring time like I have never experienced before. I only wish this happened during the week and not during the weekend leaving me with a strong case of cabin fever!

Luckily I knew this storm was coming and stocked up on plenty of food to cook, keeping me occupied. While I have much more exciting foods to make than broccoli, I think the broccoli just might be the unsung hero of this snowy weekend.
