I recently started a new job in the past month and have been a little busy getting situated and recouping from the holiday season. The result is that I have had a little less time on my hands for cooking and baking. However, I think I’m finally getting back in the swing of things starting with this banana bread recipe.
Having a good banana recipe is a must if you ask me. For one it seems like bananas are always going brown on me. Secondly, banana bread is super easy to whip up any day of the week. This means if you ever are having company over or have a craving for something sweet, this recipe is perfect.
As I was making this recipe I think I realized the best reason to make banana bread, it makes your house smell amazing! I kept smelling the bread all night as I drifted to sleep. It was definitely one of my favorite ways to fall asleep.
You can customize this recipe to make it your own. If you aren’t a fan of walnuts in your banana bread you can of course leave them out. Same goes for the chocolate chips. However I think you’d be crazy to leave out the chocolate chips, that’s just my opinion!
Ingredients
- 2 eggs
- ½ cup sugar
- ½ cup butter, melted
- 1 teaspoon vanilla
- 3 overly ripened bananas (or 1 cup), mashed
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 cup plus 2 tablespoons all-purpose flour
- ½ cup walnuts, chopped (optional)
- ½ cup chocolate chips
Instructions
- Preheat oven to 350 degrees F. Grease and flour a loaf pan.
- In a large bowl beat the eggs and sugar together until pale yellow.
- Add mashed bananas, melted butter, and vanilla. Mix until fully combined.
- In a medium bowl combine salt, baking powder, baking soda, and flour. Add mixture to wet ingredients and beat just until combined, scraping down sides of the bowl with a spatula.
- Gently fold in chocolate chips and walnuts.
- Pour mixture into prepared bread pan and bake for 55-60 minutes, or until a toothpick comes out clean from the center. Let cool in pan for ten minutes and then remove bread from pan and cool completely on wire rack.
