For the past four years I have made a carrot cake for Craig’s birthday. I’m not sure what made him want a carrot cake in the first place but now it has become somewhat of a tradition. It’s a good thing I like carrot cake because this year I made an entire cake for only two people…

In the past I have switched it up by making a carrot cake/cheesecake hybrid. While that is delicious, there is something nice about making the classic. This year too his birthday fell even closer to Easter which made me even more excited to make this carrot cake!

Baked Macaroni & Cheese

The other day, I woke up at 6 am anxious, excited, and unable to sleep, waiting for the sun to come up. Why you might ask? Well because I knew that it had been snowing all night and I couldn’t wait to see what it looked like outside. As I have mentioned a real winter is brand new to me. Seeing snow fall is something I have only seen a handful of times. So as soon as the sun came up my boyfriend Craig and I ran outside to the park across the street to enjoy the falling snow. It may have snowed a little last week but this time we got about 5 inches. It was very exciting for us. We were definitely the only people out there!

The cold weather made me crave some comfort food, and what is more comforting than macaroni and cheese? Almost nothing I think. So that is exactly what I made.

Look at all that cheese! Yum!

I used 3 different cheeses for this recipe: sharp white cheddar, mild yellow cheddar, and fontina. If you ask me these are some of the best cheeses to use when making mac and cheese. The cheddars give it a nice flavor and the fontina gives it a rich creaminess. Really you can use whatever variety of cheeses you want, this just happens to be one of my favorite combinations. Gruyere is also a winner when it comes to mac and cheese. I have tried a lot of cheeses when it comes to making mac and cheese…

Soft Pretzels w/ Beer Cheese Sauce

Beer & Cheese. Cheese & Beer. No matter what order they come in, two of my favorite things come together in this recipe perfect for a chilly, rainy afternoon or a Sunday spent watching some football.

Pretzels with cheese dip have long been a favorite of mine. There is a beer garden down the street from where I live and they serve this massive pretzel (like feeds 4 people massive) with cheese dip. It is the perfect complement to a nice cold beer and frequently ordered for only 2 people. So when the mister was craving a pretzel and cheese the other day, the beer garden was an option until he said he was craving a beer cheese sauce. As he searched for a restaurant that had beer cheese sauce, a recipe that I saw a while back came to my mind. Glancing over it again I realized it wouldn’t take long to make and wouldn’t require us to drive 30 minutes across town to order beer cheese sauce. Even more exciting was that the mister told me he would go to the store and get the missing ingredients while I made the pretzel dough. Who could say no to that?!
