It has been snowing here nonstop for over 24 hours and will keep snowing for an additional 24 hours… I have to say this is Spring time like I have never experienced before. I only wish this happened during the week and not during the weekend leaving me with a strong case of cabin fever!
Luckily I knew this storm was coming and stocked up on plenty of food to cook, keeping me occupied. While I have much more exciting foods to make than broccoli, I think the broccoli just might be the unsung hero of this snowy weekend.
My idea for this broccoli recipe came from having it has an appetizer in a restaurant not too long ago. Charred broccoli was on the menu and it being so rare that broccoli is served as an appetizer, we decided to try it.
It turns out simple roasted broccoli is incredibly delicious when you get a nice char on it! Not much is needed to dress it up either, just a little garlic and lemon takes the broccoli to the next level.
I dare to say that kids and adults alike will enjoy this broccoli recipe! If you want to make it a full on appetizer, serving it with a cheesy dressing of your liking is another way to fall in love with this roasted broccoli.
Roasted Lemon Garlic Broccoli
Ingredients
- 2 broccoli crowns, cut into even size florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced (not too finely)
- zest of a lemon (about ½ teaspoon)
- ½ teaspoon salt
- ¼ teaspoon pepper
- juice of ½ lemon
- grated Parmesan cheese, optional
Instructions
- Preheat oven to 425 degrees F. Lightly grease a baking sheet.
- In a bowl, toss together the broccoli florets, olive oil, minced garlic, lemon zest, salt, and pepper.
- Spread out mixture evenly on baking sheet and roast for 18-20 minutes, until broccoli is nice and charred.
- Remove from oven and drizzle with lemon juice. Sprinkle with Parmesan cheese if desired.
- Serve immediately.
This looks awesome. My husband usually only like broccoli covered in cheese sauce but I’m sure he’ll love it charred like this. What a great easy side dish, any day of the week!
I promise the char will make him forget about the cheese!
