Thai Chicken Curry

Have you ever heard of the Manitou Springs incline? If you have and/or have ever done it you will understand the pain that my legs are in today. If you have not heard of it, it’s a one mile trail just outside of Colorado Springs. One mile sounds easy until you read a little bit further and see that it gains over 2,000 feet of elevation in that 1 mile. Yesterday I decided to give it a try and today muscles hurt I didn’t even know I had. I recommend doing it to give yourself a challenge but if you do, you are going to need a delicious meal to make you feel better for all the hard work you did.

Thai chicken curry is my kind of comfort meal to make me forget that standing up is a painful task.

Cinnamon Swirl Bread

When the temperature drops there is just something that makes me crave a warm baked good. Usually it’s chocolate based but this time I had a craving for cinnamon. What’s a warmer spice than cinnamon? I think just about nothing.

So what happens when we get a snowy, cold night? I get a craving for cinnamon bread is what happens. I decided to put my oven to work so that fresh and delicious cinnamon bread was ready for me to devour in the morning. And that is exactly what happened.

Skillet Brownie w/ Salted Caramel Sauce

I know that most of us out there are trying to be healthy. Especially with the recent start of the new year and springtime coming up. I’m right there with you guys if that’s where you are. However, I will gladly jump off the healthy train/ship and run as fast as I can to this brownie with salted caramel sauce. It is that good.

Brownies are not typically something I make a lot of. For some reason I am always more inclined to make cookies or other treats instead of brownies. I think that brownies tend to be all chocolate and not much other flavor. Don’t get me wrong, I love chocolate and have a hard time going a day without it, but I like a little more dimension with my chocolate. That’s why I was drawn to the idea of making a salted caramel sauce to go with my brownie.

White Chicken Chili

It always seems like there is not enough time in the day. Especially during the week when we all get a little busier than we wish we were. So this week I decided to do some prep ahead of time and make this chili to have on hand and make coming home after work a little easier. And let me tell you it worked out wonderfully!

If you have some extra time on the weekend, whipping up a pot of soup or this chili can be incredibly helpful to have ready for the week. This recipe in particular is super easy to make and keeps well for whenever you’re ready to eat it.

Sugar Cookie Truffles

I have been on quite the hiatus for the past two weeks. I have been M.IA. for a couple of reasons. First, I have been fighting a cold for what seems like forever and have not been up for doing much other than drinking tea.  Secondly, I had my parents in town and have been playing hostess to them. We were lucky enough to go on a ski trip which also took me away for a little. Nonetheless I am back just in time for Valentine’s Day!

If there’s one thing I like about the Valentine’s Day is that it involves chocolate, and lots of it. So I knew I needed to make something chocolatey this week. I settled on making these sugar cookie truffles because of how delicious they sounded and how simple they were to make. While I have no problem making an extravagant dessert, there is something extra sweet about making treats that take no time at all.
