Chicken Potstickers

With the big game just around the corner I keep seeing lots of football snacks circling the Internet. Of course this means lots of wing, nacho, and dip recipes. Don’t get me wrong these are three foods I could eat daily however, I propose we bring a new player into the mix: potstickers. It turns out making potstickers at home is incredibly easy and super delicious.

I never really considered making homemade potstickers, especially after finding frozen ones at Trader Joes that are addicting. I decided to give it a try after feeling ambitious the other afternoon and wanting to step outside of my comfort zone. As it turns out these are a cinch to make and are ready in 30 minutes.

Italian Wedding Soup

Winter is officially here, which means soup season is officially here.  When it’s cold out I think we all can agree that soup is the ultimate remedy to beat the freezing temperatures outside. Or if you live in Florida like I used to, beat the not so hot temperatures outside.

I have to say, after moving to Colorado, hearing people talk about how cold it is with 5o degree temperatures in Florida makes me laugh now. I used to be one of those people though so I get it. However, nowadays when it hits 50 here I run outside like it’s summertime to feel the sunshine on my face.

Chocolate Chip Banana Bread

I recently started a new job in the past month and have been a little busy getting situated and recouping from the holiday season. The result is that I have had a little less time on my hands for cooking and baking. However, I think I’m finally getting back in the swing of things starting with this banana bread recipe.

Having a good banana recipe is a must if you ask me. For one it seems like bananas are always going brown on me. Secondly, banana bread is super easy to whip up any day of the week. This means if you ever are having company over or have a craving for something sweet, this recipe is perfect.

Quinoa & Kale Mixed Green Salad

There aren’t many salads I feel deserve to be the star of the show. Usually salad for me is a side dish that I throw together as a way to eat some veggies with dinner. However, I’ve realized that if you put some thought into a salad it can be a real winner. Some of my favorites include a well done chicken Caesar salad, roasted butternut squash salad, and this quinoa kale salad.

I decided to recreate this salad after eating it at this little juice spot called Rawesome Juicery in Sweet Auburn Market when I lived in Atlanta. Whenever I was feeling I needed to eat healthy, I would go to this spot and order this salad along with an amazing banana smoothie they made. They also had these healthy “shots” like one made with ginger, turmeric, honey, cayenne pepper, and lemon designed to help you kick a cold. I will admit I only had this once when I was feeling under the weather and it did not taste too good! But it did help clear my sinuses which was what it was made to do.

Roasted Tandoori Spiced Chicken

If there is one recipe I think everyone should know how to make it is a roasted chicken. It might sound intimidating at first, but roasting a chicken is very simple and, done correctly, always delicious.  One great thing about roasting a whole chicken is that you can season it however you want. Another great thing is that a roasted chicken makes an easy weeknight meal or a nice Sunday supper. Once you get the hang of roasting a chicken it will always be something you have in your back pocket for dinner.

For Christmas, one of my brothers gave me a bunch of spice blends from a local farmers market.  In the mix was this tandoori space, which is something I’ve been wanting to try, so I decided to roast a chicken with it!
